Save the Pulp: A Quick Zero-Waste Recipe Idea

Carrot pulp is often set aside after juicing, yet it remains a simple ingredient that can still be used in everyday cooking. Finding ways to use what we already have can support a more natural and practical approach in the kitchen.


Carrot Croquette

Ingredients

  • 2 eggs

  • 1 cup water

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 4 ounces self - rising flour

  • 1 ounce cornmeal

  • 8 ounces carrot pulp

  • 8 ounces leftover cooked salmon mashed

  • 4 tablespoons of olive oil that is suitable for frying.




Instructions

  1. Whisk the eggs with water until smooth

  2. Add carrot pulp and mashed fish to the liquid blend

  3. Combine dry ingredients and slowly fold into the mixture until

  4. Heat olive oil in a skillet over medium heat.

  5. Drop batter by the tablespoonful into heated olive oil

  6. Fry on each side until golden brown

  7. If pan gets too dry, more oil can be added in small amounts.

Tastes better when hot or warm. Can be had by itself or with a salad.


This recipe is flexible. You can use any left over meat that you have to replace the fish. and use fresh garlic and onion if preferred.
